Everything you need to know to taste like a pro (or at least fake it)

How to Taste Wine

The 5 S's -- your guide to looking like you know what you're doing:

  1. See -- Hold your glass at an angle against a white background. Look at the color. Deeper red = bolder wine. Light red = lighter body.
  2. Swirl -- Give it a gentle swirl (keep it on the table if you're nervous). This releases the aromas. Watch the "legs" run down the glass -- thicker legs = higher alcohol.
  3. Smell -- Stick your nose in the glass. What do you smell? Fruit? Spice? Vanilla? Oak? There's no wrong answer.
  4. Sip -- Take a small sip. Let it roll across your tongue. Is it sweet? Dry? Tannic (that drying feeling)? Smooth?
  5. Savor -- Swallow (or spit!) and notice the finish. Does the flavor linger? A long finish usually means a quality wine.

Red vs White

Red Wines -- Made with dark-skinned grapes. The skins stay in contact with the juice during fermentation, giving color, tannins, and body. Best served at 60-68°F (slightly below room temp).

  • Light reds: Pinot Noir, Grenache
  • Medium reds: Merlot, Sangiovese, Zinfandel
  • Bold reds: Cabernet Sauvignon, Petite Sirah, Syrah

White Wines -- Made from any color grape, but the skins are removed early. Lighter, crisper, often with higher acidity. Best served cold, 45-55°F.

  • Light whites: Pinot Grigio, Sauvignon Blanc
  • Rich whites: Chardonnay, Viognier
  • Sweet whites: Riesling, Moscato

A varietal is just the type of grape. Here are the ones you'll encounter most in Sacramento wine country:

Zinfandel -- Bold, jammy, peppery. The king of Lodi.
Cabernet -- Full-bodied, dark fruit, structured.
Petite Sirah -- Inky, powerful, dark berry.
Barbera -- Bright acidity, cherry, Italian style.
Sangiovese -- Medium body, tomato leaf, earthy.
Syrah -- Smoky, peppery, dark fruit.
Viognier -- Floral, peachy, aromatic white.
Chenin Blanc -- Crisp, apple, Clarksburg star.

  • DO ask questions -- tasting room staff love it
  • DO spit if you want -- that's what the bucket is for
  • DO take notes on your phone (or use our journal!)
  • DO buy a bottle if you love something
  • DON'T wear strong perfume/cologne -- it kills aromas
  • DON'T feel pressured to buy (but it's nice to)
  • DON'T get wasted -- pace yourself, eat lunch
  • DON'T be afraid to say what you like -- "I like sweet reds" is totally valid

If it's red and bold: "Great structure. I'm really getting the tannins."
If it's smooth: "Very approachable. Silky mouthfeel."
If you don't like it: "Interesting. It's very... complex."
If you love it: "I'm getting notes of..." (then name any fruit).
If it's oaky: "Beautiful barrel influence."
If you're lost: "What's your personal favorite here?"
If you want to sound fancy: "This has a really lovely nose."
Universal closer: "This would pair beautifully with..." (literally anything).

The Spit or Swallow Guide

Yes, it's totally OK to spit at wine tastings. In fact, professionals always do. Here's the deal:

  • Spit when you're visiting 3+ wineries and want to actually remember the wines
  • Spit if you're the designated driver (hero status)
  • Spit if a wine isn't your style -- no judgment
  • Swallow the ones you absolutely love
  • Swallow if you're only visiting 1-2 wineries and have a driver
  • Every tasting room has a dump bucket -- use it confidently
  • You can also pour out wine you don't want -- it's not rude

Pro tip: Even if you swallow, you don't have to finish the pour. A small sip is enough to decide if you like it.

The vines are blooming, wildflowers carpet the foothills, and tasting rooms are uncrowded. Perfect weather -- mild days in the 70s. Many wineries host spring barrel tastings where you can sample wines straight from the barrel before they're bottled.

It gets HOT (95-105°F in Lodi). But the long evenings are magical, and many wineries host outdoor concerts, food truck events, and sunset tastings. Start early, bring water, and embrace the heat. AC-cooled tasting rooms are your friend.

September - November

HARVEST SEASON. This is THE time. The vineyards are active with picking, the air smells like fermenting grapes, and many wineries offer special harvest events. The foliage turns gold and red. Book ahead -- this is peak wine country season.

Quiet, cozy, and intimate. Tasting rooms are empty, staff have time to really chat with you, and some wineries offer special barrel tastings and library wines. El Dorado may have snow at higher elevations. Fireplaces, hot food, cold wine -- perfection.
